Diabetic Friendly Pancake Anyone?

It's that time of year again! Pancake Day! and just because you have diabetes why do you have to miss out on the fun? My pancake day tip is to buy the cheapest mix you can find! Yes the cheapest, I find ASDA's 7p mix does the job nicely!

Why the cheapest? well extensive research (eating them) has found that the more expensive the mix. Especially the ready to shake ones, contain different types of syrup. Which has a horrible affect on my blood sugars for hours afterwards sending them sky rocketing up into the 20's.

The cheap mix however only contains 32grams of carbs and from that you can make about 5 pan cakes. That's just 6 grams of carbohydrate per pancake. Which for me on a ratio of 1 unit of insulin per 10grams of carbs is great news and only a small amount of insulin needs to be spent.

Now just add a healthy topping and enjoy!
